Sweet Summer Treat

Walnut Banana French Toast




When I woke up this morning I had a strange craving for french toast. I think my craving came from the many facebook tags I've been getting. It's summer and most of my friends are out on vacation so all I've been seeing are instagram pictures of food they are eating at the hotel buffet or on the beach somewhere.


I pretty much had all the ingredients at home, so after running a few errands in this crazy hot manila heat I decide to get some fruit for my french toast. I went to SM Hypermarket to get some mixed fruit 

Somewhat long side note: while I was waiting for my ride home, I saw vendor selling pineapples, mangoes, and watermelon in a push cart. The heat this summer is crazy and can be harmful. If you find yourself not feeling too well, fruits are a great way to re energize and hydrate your body. You can replenish electrolytes you lose when you sweat and watermelons are a good way to hydrate your body. So next time you're caught out in the sun and there is no water around go for the fruit and remember don't drink soft drinks if you are thirsty. Caffeine is a diuretic.

 This is actually a great way to cool off. The brown sugar and the fruits will help cool and regulate your body temperature. Anyway you know the deal just scroll down for the step by step and ingredients. Stay cool!

This is just one serving, just multiply it by the number of people you are cooking for...

1 ripe but firm banana, 1/2 cup walnuts, 1 egg, brown sugar, 1/4 cup milk
2 pieces of sliced bread, cinnamon , nutmeg

 Chop the walnuts in halves 

 slice banana

In low- med heat melt a knob of butter and combine banana and walnuts. Use a spatula to mix.

 Add 2T of brown sugar stir continuously until the sugar is evenly melted

Take some of the banana walnut mix and spread in the middle of one slice of bread.

 Leave some space around the sides of the bread.

 Put the other slice of bread on top and lightly push down.

 In a separate bowl mix your egg, milk, a sprinkle of nutmeg and some cinnamon. 
Pour the batter on a platter . Place the bread in the batter and let it sit for about 5 minutes on each side so that the batter can soak into the bread.

 Heat a non-stick pan with a little olive oil and a knob of butter.

 Fry bread in low-medium heat for about 8-10 minutes.

 With a spatula, carefully flip on the other side and again fry for 8-10 minutes

 When you are finished cooking place on a chopping board and let it sit for about a minute and cut down the middle exposing the filling inside.

If the Banana walnut filling has hardened, heat again.


 Pour the extra filling on top of the toast. 

 Lightly sprinkle with powdered sugar. USE a strainer, I obviously didn't use one.
This will avoid the powder to clump and will let you apply it evenly (adding powdered sugar is optional) 

You you want you can add some fruit. I added some dragon fruit, oranges, grapes, apples
watermelon and of course ripe mangoes. 

Fella's this will definitely get you some pogi points with your girl. This is a sweet and satisfying meal that's easy to make and will impress her with your cooking skills.
